Super Bowl dip

Going to a party or just staying home?  Either way, this is a great dip that is sure to please a crowd or just yourself :)  I mean its really all about the food and commercials right?!  Well I suppose the game is important too.

The best thing is that its easy and takes no time to make!  It does taste better if you refrigerate it over night.  Enjoy....Happy Super Bowl 2012!!  Go Giants, Go Patriots!


Ingredients2 (15- to16-ounce) cans black-eyed peas, drained and rinsed

1 (15- to 16-ounce) can black beans, drained and rinsed

1 (11-ounce) can of corn (or substitute defrosted frozen corn)

1 large red onion, chopped

1 green bell pepper, seeded and chopped

1 red bell pepper, chopped

1/2 cup of chopped cilantro

Juice of 1 lime

Cumin Vinaigrette (recipe follows)DirectionsMix all ingredients and let marinate in the refrigerator for several hours. May be prepared a day before serving. Makes 8 to 10 servings.

Cumin Vinaigrette: Combine 2/3 cup apple cider vinegar, 1 tablespoon Dijon mustard, 11/2 teaspoons ground cumin, 1 teaspoon minced garlic, 1 teaspoon ground black pepper and 1/2 teaspoon salt. Whisk in 1/2 cup olive oil.

Note: For a spicier version, add a seeded and finely chopped jalapeƱo pepper.
